This salad takes a little more time and effort, but it's perfect if you're having girlfriends over for a special. healthy lunch. You can also prepare the ingredients ahead of time and have it two or three times during the week. Once the wheat berries are cooked and the dressing is made, you're good to go!
You'll need:
For the wheat berries:
2/4 cup soft wheat berries
2 cups water
For the dressing:
1/2 cup cilantro, stems removed
3 tbsp extra virgin olive oil
3 tbsp fresh lime juice
2 tbs water
1 tbsp pure maple syrup
2 tbsp hemp seeds
1/2 tsp salt
fresh ground paper
For the salad
5 oz baby arugula
2 mangoes, diced
3/4 cups chopped green onions
1 avocado, diced
Directions:
Boil, blend and toss!
- Place wheat berries and 2 cups water in a medium saucepan and bring to a boil.
- Reduce heat to low and simmer, covered for thirty minutes (or until wheat berries are chewy and tender).
- Drain excess water.
- Place all dressing ingredients in a blender and blend until completely smooth.
- Place arugula, cooked wheat berries, mango, green onion and avocado in a large bowl.
- Pour your dressing over the top and toss well to combine.
- Garnish with extra hemp seeds, if you'd like!
